Barley soup
for 5 people
30 g of butter
80 g chopped onions
50 g carrots in cubes
50 g slices of smoked ham and grison meat cut into cubes
salt and pepper
80 g of pearl barley
15 g flour
80 g leeks cut into cubes
30 g of celery in cubes
1.5 l of broth
2 dl cream
Preparation:
Onions, leeks, celery, carrots, smoked ham and grison meat in butter. Add barley and steam. Add flour, add bouillon, boil and simmer about 45 min. Finally refine with cream and season with salt and pepper.
Served as a side dish are smoked pork sausages, Wienerli or Bündner-Beinwurst
