The term "full nutritional value" means what it says.
The equivalent German term (Vollwert) was coined by nutritional scientist Werner Kollath (1892–1970). He is known for stipulating that "our nutrition should be as natural as possible". Kollath found out, amongst other facts, that valuable healthy growth and cell renewal substances are destroyed by processing and heating. He differentiated between untreated natural foods and processed, denaturalised foods and developed a process for conserving cereals and some pulses without the use of chemicals and overheating. This means that cereals and soya flakes retain their full nutritional value for longer periods, which they would otherwise quickly lose through oxidation. The method is called the Kollath method® after its inventor and the German term (collatieren®) is registered as a trademark.
A modern diet should be as full of nutritional value as it should be enjoyable and flavoursome, and give us as varied a menu as possible - without additives, with all its vital components intact and, above all, with a wealth of flavour!
